David Sandusky worked in fine dining before turning to barbecue. He opened BEAST Craft BBQ Co. in Belleville, Illinois, in 2014, and runs it with his wife, Meggan. St. Louis Post-Dispatch critic Ian Froeb included BEAST Craft BBQ Co. and Beast Butcher & Block in his 2020 list of the 100 best restaurants in St. Louis.
Technique
BEAST has said it sources locally and never freezes or carries over its meats. Sandusky's pork steaks are rubbed, rested, smoked and grilled, and he has described flipping and basting them often so they do not overcook.
