The Mission
Why This Exists
American barbecue is one of the great regional cuisines of this country — a tradition built over centuries by communities that understood how time, smoke, and heat could transform the toughest cuts of meat into something transcendent. It is a cuisine that belongs to specific places, specific traditions, and specific ways of doing things.
The BBQ Atlas exists to document those traditions. Explore the regional styles that make American BBQ unlike anything else in the world — from the vinegar-sauced whole hog of the Carolinas to the post-oak brisket of Central Texas, the sweet and tangy ribs of Memphis, and the burnt ends of Kansas City.
Each city guide highlights restaurants known for quality, consistency, and commitment to their regional tradition. The pitmasters behind these places have spent decades perfecting their craft, and they deserve to be recognized.

Scoring Methodology
How Restaurants Are Evaluated
Scores reflect community reputation, regional tradition, and public recognition. Each restaurant is evaluated based on the quality of its craft, its standing among locals and pitmasters, and its contribution to the BBQ traditions of its region.
Evaluation criteria are specific to each regional style. A Kansas City restaurant is not judged by Texas standards, and vice versa. Each restaurant is measured against the best examples of its own tradition — which means a 90 in Memphis represents a different achievement than a 90 in Austin.
Smoke
Depth, consistency, and integration of smoke flavor. Does it enhance the meat or overwhelm it?
Bark
The crust that forms on the exterior during the cook. Texture, color, and flavor of the outside edge.
Tenderness
Appropriate texture for the cut and style. Brisket should yield; ribs should have pull, not fall off the bone.
Value
Portion, price, and whether what lands on the tray justifies the cost and the wait.
Atmosphere
The physical space, the service, and the sense of place. Does it feel like a real pit with a real culture?
Consistency
Whether the quality holds across multiple visits, days, and meats — not just one great bite on one lucky day.
